Remove end dates from challenges - #629

Challenges no longer have a fixed end date. Contributors are welcome to tackle any open challenge regardless of the dates that were previously listed, many of which had already passed. Drops the "End date" field from all 29 existing challenge documents and from the challenge template so that new challenges are not created with one. Signed-off-by: Felipe R.
